quick and easy stuffed peppers
This is a quick and easy recipe for stuffed peppers that has a healthy spin on it with the use of egg beaters and ground turkey. You can also double the batch and freeze part of it
1/2 C rice
1/2 cup egg beaters
1 lb of lean ground turkey
1 small can of tomato sauce
1 small onion chopped
1/4 cup of grated Romano cheese
4 green peppers(Tops cut and inside cleaned out)
- Mix all above ingredients except green peppers.
- Place one inch of water at the bottom of the casserole pan.
- Place the four green peppers on top of the water.
- Fill each of the peppers with meat mixture and cover with aluminum foil.
- Cook for 1.5 hours at 350 degrees.
- Remove aluminum foil the last 15 minutes of cooking time.
