quick and easy stuffed peppers
This is a quick and easy recipe for stuffed peppers that has a healthy spin on it with the use of egg beaters and ground turkey. You can also double the batch and freeze part of it :)
1/2 C rice
1/2 cup egg beaters
1 lb of lean ground turkey
1 small can of tomato sauce
1 small onion chopped
1/4 cup of grated Romano cheese
4 green peppers(Tops cut and inside cleaned out)

  1. Mix all above ingredients except green peppers.
  2. Place one inch of water at the bottom of the casserole pan.
  3. Place the four green peppers on top of the water.
  4. Fill each of the peppers with meat mixture and cover with aluminum foil.
  5. Cook for 1.5 hours at 350 degrees.
  6. Remove aluminum foil the last 15 minutes of cooking time.
